Traditional ovens simply radiate heat from the heating elements in the bottom or top portion of the oven. This type of cooking leads to spots in the oven where the temperature is either cooler or hotter than the desired settings. This is because the heat can be “blocked” by items such as cookie sheets, then “settles” at the top of the oven as it rises.

A convection oven will circulate the hot air through the oven using a fan that is placed near the heating elements. This eliminates these hot and cool spots.

This leads to cooking that is both faster and more even. If you are new to convection cooking, it is a good idea to experiment with your recipes at lower temperatures and reduced cooking times. Otherwise, you could end up with overly cooked food.
